iREB is a tool for Windows® and Mac® that will bypass any errors while restoring to a custom IPSW in iTunes.

iREB 4.0 is coming soon to support more devices on 4.0 firmware and it is currently made on Windows. The Mac version will be out but we don't know when...

iREB also gets your iPhone or iPod touch out of recovery mode any time your in Recovery Mode but it won't get you out of DFU mode.
